Recipe Alert: Spinach Feta Dip

Hello to my foodie Fellowers! Superbowl time is approaching, and the perfect time to share one of my favorite party dip recipes: Spinach and Feta Dip. This delicious concoction is the star of any buffet table. So let’s get to the good stuff:


Spinach and Feta Dip:

6 oz of fresh spinach

16 oz of cream cheese

1 cup of half and half

1/4 cup of Parmesan

1 cup of an Italian blend shredded cheese

1 1/2 cups of feta

2 teaspoons of whole grain or Dijon mustard

1 teaspoon of Italian seasoning

2 tablespoons of fresh basil

2 tablespoons of garlic

1 tablespoon of extra virgin olive oil

Salt and Pepper to taste

Preheat the oven to 375 degrees. Roughly chop 6 ounces of fresh spinach. Heat a skillet with 1 tablespoon of extra virgin olive oil. Add spinach and cook until tender and most of the liquid has evaporated. Add garlic, mustard, basil, Italian seasoning, salt, and pepper. Add 1 cup of half and half and 1/4 cup of grated Parmesan.

Add cream cheese and Italian shredded cheese. Stir until smooth and creamy. Add about 1 cup of crumbled feta. Put dip in an oven safe cookware. On the top sprinkle about 1/2 cup of crumbled feta. Bake for about 30 minutes. Serve warm with black pepper crostini bread (pictured), or pita chips.
